Slow Cooker Low Carb Taco Soup

This is one of my all time favorite recipes, I usually prepare this 1-2 times a month because its so satisfying and perfect if you love using your slow cooker instead of heating up the whole house when cooking dinner.  I adapted my recipe from a recipe I found when looking for low-carb slow cooker options when I started eating low carb foods.

These are the ingredients I used in the Slow Cooker Low Carb Taco Soup
Ground beef, taco seasoning, Mrs Dash Chipotle Southwest.
Step One: First you would brown the ground beef in a skillet and drain any remaining fat from the pan. Season with one tablespoon of Mrs. Dash Southwest Chipotle seasoning.

Step Two: Add the two packages of cream cheese, two remaining tablespoons of Mrs. Dash Chipotle Seasoning, and the two cans of Southwestern Style Tomatoes and Green Chilis (Rotel) to the slow cooker while the ground beef is cooking.
Step Three: Add the ground beef to the slow cooker and stir all the ingredients together.

Step Four: Once the meat is mixed with the other ingredients you would add the chicken broth and combine. I know it almost looks ready to eat, but wait a little while, trust me the four hour wait is worth it!

Step Five: You will then set the slow cooker to low and cook for four hours. After the soup has cooked and combined all those delicious flavors together you will end up with something like this. Now go get yourself a bowl!

I love topping my Slow Cooker Low Carb Taco soup with avocado. It is beyond delicious. If you aren’t a fan of avocado there is a plethora of toppings you can add to make it your own!


  • 2 lbs ground beef
  • 2 8- ounce packages of cream cheese
  • 2 10- ounce cans of Rotel (or any brand of Southwestern Style Diced Tomatoes and Green Chilies)
  • 3 Tablespoons of Mrs. Dash Southwest Chipotle Seasoning
  • 4 cups of chicken broth


  1. Brown ground beef in a skillet over medium until cooked through, drain any excess fat and add your seasoning.
  2. Add cream cheese, Rotel tomatoes and Mrs. Dash seasoning to the slow cooker.
  3. Add the browned ground beef to the slow cooker and stir to combine them.
  4. Pour chicken broth into the slow cooker and stir to combine.
  5. Cook on low for four hours and its done.
